How to make this tofu?

In a sprayed casserole dish, spread 1/2 cup sauce, then place tofu slices (in single layer if possible), followed by remaining sauce, 1/2 cup mozzarella cheese, 2 tablespoons Parmesan cheese and fresh parsley.  Also if there are any remaining bread crumbs, you can spread these on top as well.  Bake uncovered at 400 degrees for 15 minutes.  Turn broiler on, place dish 4 inches from heat, and continue cooking about 2 minutes or until cheese is golden.

What is tofu and why include tofu more often in your diet

Tofu is rich in high-quality protein. It is as well as a nice source of B-vitamins and iron. When the curdling agent used to make tofu is calcium salt, the tofu is an excellent source of calcium. While 50 percent of the calories in tofu come from fat, a 4-ounce serving of tofu contains 6 grams of fat. It is low in saturated fat and contains no cholesterol.

In 100g of tofu is about 75 calories. 38 calories from fat + 33 calories from protein and only six calories from carbohydrates. Keep in mind that exact figures depend on the brand and type of tofu

Here is a nice review of Toh Dam Tofu Korean restaurant. It looks like really good restaurant and a must to visit if nearby. Unfortunately for me Korea is as near as this restaurant so it may take a while to go there :)

Of course Toh Dam Tofu’s namesake suggests that they serve soondubu (tofu soup), which they do and it is gooooood. I like that their version is not as salty as others that I’ve had, and the chunks of soft tofu bobbling around in the soup are creamy and flavor-laden of the savory, fiery kimchi pork broth that I sampled on a recent visit.

Another great tofu recipe. Tofu is known for its extraordinary nutritional benefits and its versatility.Also known as soybean curd, is a soft food like cheese made by curdling soy milkwith a coagulant. It is a soft-tasting product that easily absorbs flavoursof other components. Tofu is sold in containers filled with water or in aseptic cartons. Fresh tofu is usually packed in water and must be refrigerated and kept in water untilused. If the water is drained and changed daily, the tofu should last a week. Cooking tofu is easy and perfect for beginners.

So tofu is perfect for this recipe. Tofu is low in calories so this one is just perfect for everybody.

You will need:

• 1/2 pound extra-firm tofu
• 1 cup frozen raspberries, thawed
• 3 tablespoons frozen pineapple juice concentrate
• 2 tablespoons frozen apple juice concentrate
• 1 tablespoon arrowroot

Make a cut in the tofu container and carefully pour the water. 
Remove the block of tofu and place on a stack of plain paper towels - about 4 or 5 leaves. (You can also do this with a clean cloth or towel normal.) Gently press the tofu on paper towels to remove excess water. If desired, turn the block of tofu and the "taint" on paper towels to remove water. Do this until your stack of paper towels are completely wet. If desired, create a new stack of paper towels and repeat. Moisture rather than eliminate, the bulk of its froth. 
Place tofu in food processor and whip until smooth, scraping sides of bowl as needed. 
Add the raspberries, juice concentrates and arrowroot. 
Blend until smooth. 
Pour into serving dishes, keep refrigerated until served.

Tofu, a great source of soy protein, also boasts significant calcium and magnesium. Research shows that soy-based meals that also include fruits, vegetables, whole grains and nuts can help fight hypertension, heart disease, obesity, diabetes and some cancers. Tofu is a great flavor sponge. And because it readily soaks up seasonings, it's a wonderful choice for marinating.  It is convenient and filling and a great source of protein.

Can you think of a better way to use tofu than to make fantastic vegan pizza? Maybe you can, but this recipe is great neverheless :) 

Cooking tofu is easy and so is preparing pizza. There are so many different ways of making pizza. In vegan version there is usualy tofu instead of cheese. And lots of different veggies.

Here is a little different recipe than my usual pizza. What you do is prepare dough and let it first bake for 5 minutes. Then you put tofu pesto with basil, roasted tomato sauce (with garlic) and caramelized onions. Simple, looks great, is vegan friendly and delicious.
